Christmas decor, a yummy recipe, and a winner

Life has been crazy busy and I don’t foresee it slowing down much before Christmas, so I thought I’d fit in a quick, short blog post to announce the winner, to share some photos, and to share a yummy recipe!

I am sure you are all in the midst of preparing for Christmas and the holidays, as I am, and I wanted to share a quick recipe with you all. This is a traditional Dutch recipe, called Boterkoek, which translates to butter cookie, and my family LOVES this! I made it yesterday to give some away as gifts, and then couldn’t deny my family some, so kept the rest for us. But it is so easy and quick that I can easily whip up more. If you are in need of something rich, yummy, and quick, I hope you will give this a try! ( And you most likely have all the ingredients on hand already…I love those kinds of recipes!)055

Boterkoek 

  • 1 cup butter
  • 1 1/2 cups sugar
  • 2 eggs, lightly beaten
  • 2 teaspoons baking powder
  • 2 cups all purpose white flour
  • 1 1/2 teaspoons of vanilla or almond extract

Cream butter. Add sugar and about 1 1/2 of the beaten egg ( reserve the rest and mix with a spoonful of milk for glaze)

Add baking powder, extract, and flour. Place in 9 x 13 inch baking pan, or 2 9-inch pie plates ( it doesn’t really matter what size pan you end up using~just keep an eye on the baking time if your pan is much bigger or smaller and adjust the time accordingly).

Brush top with remaining egg/milk mixture. Bake at 350* Fahrenheit for 30 minutes ( or until lightly browned). Remove from oven and push top down with back of a spoon. Cool and cut into squares.

I packaged mine up in one of these cute gift bags, which made it look even better ( presentation IS half the battle, after all!).007I also wanted to share some quick photos of the decorating I have been doing. The house is looking very cozy and I am very pleased with it…as far as I’m concerned the Christmas decorations could stay up all year long!

Alright, as promised, this post will be nice and short….I have Christmas and 3 more birthdays to prepare for ( our middle son’s was yesterday~ we call this the Christmas/ Birthday season at our house….VERY bad planning on our part~hahaha).
