Banana Cake

This recipe is so delicious and it seems like I always have overripe bananas in the house that no one likes to eat anymore so this recipe takes care of those. I found the original recipe in a locally  published cookbook that was put together as a school fundraiser and I put my own twist on it and it’s a winner in our eyes!

  • 2 C flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 C butter
  • 2/3 C white sugar
  • 2/3 C brown sugar
  • 2 tsp vanilla
  • 3 or 4 ripe bananas, mashed
  • 1 egg
  •  1 1/2 cups mini choc chips, white chips and heath bar chips ( you can definitely play with this variation…maybe add butterscotch, or coconut, as long as the overall ends up being 1 1/2 cups)

Beat butter, sugars, and vanilla until creamy. Add egg and bananas. Add in flour, salt, and baking powder. Stir in chocolate chip mix. Place in a greased 9 by 13 pan and bake at 350* Fahrenheit for 45 minutes. Enjoy!
